Homage to the Egg
rise n°1 pays homage to the egg, one of life’s most complete and sustainable foods and the key ingredient in the soufflé. There are no 90 degree angles in the restaurant: from the curved shape of the semi-private birch forest dining area, surrounded by circular stones reminiscent of the French countryside, to the rounded bar.
The egg is a near-perfect food. It is higher in protein than any other readily available food source, is low in calories and saturated fat, contains all of the essential amino acids, provides a wide variety of vitamins and minerals, and, thanks to new scientific evidence, can be enjoyed as part of a heart-healthy diet.
